Scrambled Eggs, Dublo style.

My recipe for scrambled eggs, one of my favourite dishes.

Melt two tablespoons of salted butter into a saucepan on a low heat. (I prefer Beurre D’Isigny)

Crack in four eggs. (Moran eggs are the best, if you can get them.)

Beat with a wooden fork, adding in cracked black pepper and chopped chives.

Add a drizzle of truffle oil.

Beat until slightly runnier than you would ideally like to eat them.

Remove from the heat.

Allow them to continue to cook in the saucepan until firm.

Serve with crispy bacon or smoked salmon and hot buttered toast.

Serves two.
